Retrieve coordinates of a <code>LAS*</code> object in matrix form. It creates a copy of the coordinates
because of the coercion from <code>data.frame</code> to <code>matrix</code>. This function inherits <code><a href="https://r-spatial.github.io/sf/reference/st_coordinates.html">sf::st_coordinates</a></code>
